Was inspired by a couple of recipes I found on the net so fiddled with them and different variations.. This brunch dish is relatively low fat and full of protein and quite easy. I tried frying it but the Bacon shrank and pulled away (still tasted great) so I baked this one and it worked perfectly. Looks pretty impressive too for guests... just saying!
