Today is National Empanada Day! Here is a recipe for an easy breakfast pie. I used cream cheese so that the result is a creamier more savory delicacy. The success of this pie is in the sweet-salty contrast.
You can add ingredients to your liking.. We found that spinach and Bacon combine nicely with goat cheese, so we can include some spinach leaves on top, it becomes perfect! You can make these ahead so you have them for breakfast during the week!
