    Bacon Tapioca Pudding! Today is National Tapioca Pudding Day. I could NOT find a recipe that calls for bacon and tapioca together. So, I tried one myself. I took this tapioca recipe from food.com and just added BACON! Wow!!

    RECIPE:

    2/3 cup sugar
    3 tbsps. Minute Tapioca
    2 34 cups milk
    1 egg (beaten)
    4-6 slices cooked bacon (to taste)
    1 pinch salt
    2 tsps. vanilla (added)

    1 Mix sugar, tapioca, milk, egg and salt in large bowl. Let stand 5 minutes. (Use a bowl where your ingredients only come up half way so there's room to boil without boiling over.).

    2 Cook at full power, stirring every 2-3 minutes until mixture comes to a full boil. Should take about 10 to 12 minutes.

    3 Stir in vanilla and add crumbled bacon while it cools, pudding thickens as it cools.

    4 If desired, place plastic wrap on surface of pudding as it cools.

    Note: you can make this on the stovetop with none instant tapioca if you prefer (like I did).
