Today is National French Fries Day and you cannot go wrong with these Bacon Wrapped Sweet Potato Fries!!
All you do is peel and slice a couple of sweet potatoes and then wrap each one in a half slice of bacon. I set mine on cookie cooling racks over a rimmed baking sheet and then popped them in the oven.
2 large sweet potatoes, peeled and sliced, like french fries
1 package of your favorite bacon, slices cut in half
Heat oven to 400.
Wrap each 1/2 slice of bacon around a slice of sweet potato.
Line them up on cookie cooling rack that has been set over your rimmed baking sheet.
Bake for about an hour until potato is tender and bacon is crispy.
