    Happy National Baked Scallops Day! The perfect excuse to bake a batch of Bacon Wrapped Scallops!

    This is hands-down my favorite way to prepare scallops - wrapped in salty, smoky slices of bacon and baked until the bacon is crisp. It's great as an appetizer, but be sure to make lots because they disappear fast!

    RECIPE:

    1 1/2 lbs sea scallops (more if desired)
    1/2 lb bacon, cut slices in half (or 1/2 slice per scallop)
    1/4 lb butter, melted
    1/2 cup dry white wine
    1 tablespoon lemon juice
    1/2 teaspoon paprika
    1/2 teaspoon seasoned salt

    Directions:

    Preheat oven to 400 degrees. Melt butter and wine together, when melted add paprika, seasoned salt, and lemon juice. Drop scallops into melted wine and butter sauce. Allow scallops to marinade for about 30 minutes. Wrap each scallop with half piece of bacon, and fasten bacon with a toothpick. Place wrapped scallops onto a baking sheet, and bake in the oven for about 8 minutes, then turn over and bake for another 8 minutes or until the scallops are opaque.
