First I must say, if I was in charge of these holidays I would have made sure this day landed on a weekend! Second, Eggs Benny traditionally uses "canadian" bacon (but, I know my fellow Bacon Addicts will agree this is ham, not Bacon!). So, I always request crispy BACON with my Eggs Benedict (as shown in photo), who's with me?!?
