    Happy National Rice Ball Day! Celebrate with these Bacon Wrapped Bacon Rice balls!! Double the Bacon, double the fun!!

    INGREDIENTS:

    3 cups cooked rice
    Bacon strips
    1/2 cup finely chopped bacon
    1/4 cup finely chopped red bell pepper
    1/4 cup finely chopped carrot
    2 green onions, finely chopped
    canola oil
    salt

    DIRECTIONS:

    Heat 1 tablespoon of canola oil in a skillet, add chopped bacon and vegetables; saute them until veggies are soft and bacon is crispy.

    In a large bowl, gently combine the cooked rice and sautéed bacon and vegetables. Season with salt.

    Make bite-size rice balls. Note: If you add too much vegetables or bacon to rice, rice balls can’t hold its shape and may fall apart later.

    Cut the bacon strips into halves lengthwise. Take a bacon strip and wrap around a rice ball. Note: When rice balls are too big for bacon strip, rice will likely fall apart during cooking.

    Secure with the toothpicks.

    In a large skillet over medium-low heat and add bacon wrapped rice balls. Cook until bacon is golden crispy.
    Note: You can also bake them in preheated oven @400 degrees until bacon turn golden crispy.
