Must Try Monday!! Today is National Pound Cake Day, celebrate with some easy Bacon Crusted Pound Cake!! Cook up bacon (1/2 - 1 lb.) and crumble. Slice up some store bought or homemade pound cake. Combine 3 eggs, 1 cup milk, 1 tbl sugar, and 1/4tsp salt (and a pinch of cinnamon or nutmeg if desired), and soak each slice of pound cake in egg mixture. Coat the pound cake slices with your bacon crumbs and fry it up in some butter. You want the temperature low enough so the bacon does not burn but high enough so the egg cooks. Top with warm maple syrup or Blueberry compote (1/2 cup of blueberries, mixed with with 1/3 cup water and 1/4 cup sugar, let it lightly simmer for about 20 min, and poured it into a pyrex to cool).
