    Rocky Road Bacon Bark! Chocolate, marshmallows & nuts? It's a simple combination, but it's what makes Rocky Road so incredible! The only way to make it better…add BACON! Most people associate Rocky Road with ice cream, but it works GREAT as a bark recipe, too!

    INGREDIENTS:

    10oz milk chocolate chips
    1 3/4 cups salted peanuts, chopped
    1 1/2 cups miniature marshmallows
    1/2 cup Bacon, cooked and chopped

    DIRECTIONS:

    Melt the milk chocolate chips (microwave or double boiler - your choice). Transfer to a bowl and let cool for 5 minutes.

    Add 1 1/2 cups of the nuts, 1/4 cup of Bacon and all of the marshmallows; gently fold with a rubber or silicone spatula to combine. Transfer to a baking sheet lined with parchment paper or a Silpat.

    Smooth out the top, then sprinkle with the remaining 1/4 cup chopped nuts and Bacon. Chill for 10 minutes or until solid, then lift the bark from the pan and chop into shards.
