A close cousin to beef wellington, this chicken version is stuffed with cream cheese, mushrooms and of course, BACON!! Topped off with some homemade chicken gravy, it’s completely comforting and delicious!
For the chicken:
bacon - 6 - 8 slices
chicken breasts - 2 large, boneless and skinless halved into 4 pieces
salt and pepper - use very generously
butter - 1 tbsp
onion - 1 small, finely chopped
garlic cloves - 2, minced
mushrooms - 1/2 pound (250 g), crimini halved then sliced
rosemary - 1 tsp, dried
puff pastry dough - 1 package, refrigerated
cream cheese - 4 oz (100 g), softened
Dijon mustard - 1 tbsp
egg - 1, beaten with 1 tbsp water
For the gravy:
butter - 2 tbsp
all purpose flour - 3 tbsp
chicken broth - 1 1/2 cups
white wine - 2 tbsp
salt and pepper - use very generously
